Here’s what you will need:
White rice
Salmon
Homemade spicy salad marinade sauce
Avocado
Cucumber
Chia seeds
Mix in a small bowl: honey, sriracha, mayo, sesame oil, and dark soy sauce. (This is to make your marinated sauce.)
Place the diced salmon in a shallow dish and pour the marinade over the top, making sure all pieces are coated. Cover and refrigerate for at least 30 minutes to allow the flavours to blend.
While the salmon is marinating, prepare your rice. (I usually boil mine.)
Assemble your poke bowl by dividing the sushi rice among serving bowls. Top with marinated salmon, cucumber, avocado, and any other favourites you wish to add.
Drizzle any remaining marinade over the poke bowls and sprinkle with Chia seeds.
Serve immediately and enjoy your fresh and flavorful salmon poke bowl!
